- Place 3 loaves on a lined baking sheet.
- Cover and place in cooler overnight.
- The next day remove from cooler and keep covered. Let loaves slack at room temperature until dough reaches 55-65° F.
- Seed or top if desired.
- Place in proof box at 105° F with 85% humidity for approximately 35 minutes or until the dough doubles in size.
- Remove from proof box.
- If desired, allow the dough to become dry to touch and score with 4 diagonal cuts.
- Bake at 350° F with 15 seconds of steam for 14-16 minutes or until the top is golden brown.
- Allow to cool before packaging.
